DRAGON FRUIT COMPOTE

I’m always looking for new grain-free, egg-free breakfast options.

This bright, beautiful dragonfruit compote on top of coconut yogurt hits the spot in the summertime. Add your favorite grain free granola, pineapple, or whatever other fruits you have on hand and start your day with a delicious yogurt bowl. You can even end your day with this by serving it on top of vanilla or coconut ice cream. Store the compote in a sealed jar for up to 3 days.

Serves 2-4


YOU WILL NEED

  • ½ dragon fruit, finely chopped

  • 3 tablespoons water

  • Juice from ½ lime

  • ¼ teaspoon fine sea salt

  • 1 cup coconut yogurt

  • Pineapple slices, optional for serving

  • Dragonfruit slice, optional for serving

  • Granola, optional for serving

  • Raw honey, optional for serving


TO MAKE

In a medium pan set over medium high heat, stir together the chopped dragon fruit and water. Bring to a simmer for about 5 minutes until the liquid has reduced to a consistency that coats the back of a metal spoon. Stir in the lime juice and salt and remove from the heat.

In a serving bowl, scoop in coconut yogurt and pour a couple spoonful’s of dragon fruit compote over the top. Add desired remaining ingredients to the yogurt bowl and serve.
