CHICKEN & SHIITAKE LARB LETTUCE CUPS
This recipe is quickly becoming a go-to, last minute weeknight meal at my house.
It is quick to throw together and has unbelievable flavor that could rival almost any meal I serve my family when I don’t plan ahead. I like to use both ground chicken and shiitake mushrooms for added layers of flavor, but if you are not a fan of mushrooms, double the amount of chicken in this recipe. Likewise, if you don’t eat meat, double the shiitakes.
Serves 2-4
YOU WILL NEED
½ red onion, thinly sliced
2 tablespoons avocado oil, ghee or coconut oil
Coconut vinegar or apple cider vinegar
1 pound ground chicken
12-14 shiitake mushrooms, sliced
1 teaspoon fine sea salt
¼ teaspoon freshly ground black pepper
4 garlic cloves, thinly sliced
1” piece of fresh ginger, peeled and finely chopped
6 tablespoons coconut aminos, liquid aminos or tamari
2 tablespoons coconut sugar or date sugar
1 serrano pepper, fresno chili or small jalapeno, chopped, optional
6 green onions, white and light green portions sliced
Butter lettuce or romaine leaves, for serving
Fresh cilantro, roughly chopped, for serving
Fresh mint, roughly chopped, for serving
Lime wedges, for serving
TO MAKE
In a small bowl, cover the onions with vinegar and place in the refrigerator while preparing the rest of the ingredients.
In a large cast iron skillet or frying pan set over medium heat, add the avocado oil. Stir in the chicken, shiitakes, salt and pepper. Stir in the garlic, ginger, coconut aminos, coconut sugar and serrano peppers, if using. Let cook until the chicken is no longer pink, about 3 more minutes. Stir in the green onions and let cook for another minute.
Plate the lettuce leaves and spoon some of the chicken and shiitake larb into each. Add cilantro, mint and a few red onions on to each and squeeze a bit of lime over the top. Serve right away.
