DRAGON FRUIT SALSA
This recipe is worthy of venturing into the intimidating tropical fruit section. The nutrient-rich, antioxidant, gut-benefiting dragon fruit is much less daunting to work with than you might think.
This slightly sweet salsa is delicious served with tortilla or plantain chips or over the top of grilled white fish for a light meal. To make this spicy, chop the jalapeno with seeds and pith. For mild salsa, remove the seeds and pith before chopping.
Serves 6-8
YOU WILL NEED
½ dragon fruit, chopped
1 cup papaya, chopped
1 cup pineapple, chopped
1 avocado, chopped
¼ red onion, chopped
¼ cup cilantro, chopped
½ jalapeno, finely chopped
Juice of 2 limes
½ teaspoon flaky sea salt
TO MAKE
Add all ingredients into a medium-sized bowl. Gently mix and serve right away or store in the refrigerator for up to 3 days.
Note: To prepare the dragon fruit, cut into quarters, gently peel off the skin and proceed to chop.
