Carrot Cake Maca Latte
A cozy, cozy latte that tastes like carrot cake in a cup.
Carrot juice is combined with creamy coconut milk. The coconut milk not only makes this even more delicious, but its healthy fats help mitigate sugar spikes and increase sustenance. Maca is whisked in for a nutrient-rich energy boost without the caffeine, but if you are wanting the “caffeination”, add in a shot or two of espresso. Turmeric and a pinch of black pepper are whisked in to boost the anti-inflammatory benefits. And one more thing—I like to add all of the warming spices, but if you don’t have them on hand, just use those that you have. It’ll still be super yummy.
YOU WILL NEED
1 1/4 cup carrot juice
1 1/4 cup unsweetened coconut milk (fresh or bottled, not canned)
1-2 tablespoons maca powder
1-2 tablespoons coconut sugar or date sugar
1 teaspoon vanilla extract
1/2 teaspoon ground turmeric
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of black pepper
TO MAKE
In a small saucepan set over medium heat, bring the carrot juice and coconut milk to a simmer.
Whisk in the maca, coconut sugar, vanilla, turmeric, nutmeg, cinnamon, ginger and black pepper.
Pour into two mugs and sprinkle with a little extra cinnamon or nutmeg. Enjoy!
