Iced Saffron Pistachio Matcha Latte

I can’t help but pair saffron with pistachio in sweet and savory recipes alike… and we know I love a good matcha.

Naturally, it is only appropriate for me to bring all of these flavors together in a latte that is coziness in drink form. If you’re looking to skip the caffeine, omit the matcha and it’ll be just as delicious.


YOU WILL NEED

  • 1/4 teaspoon saffron threads, crushed

  • 1/4 cup, plus 2 tablespoons warm water

  • 1 teaspoon honey or maple syrup (optional)

  • 1 1/2 teaspoons matcha

  • 1 cup unsweetened pistachio milk, cold

Makes 1 large or 2 small lattes


TO MAKE

In a small bowl, whisk together the saffron threads, 2 tablespoons warm water, and honey (if using). Let the saffron steep a few minutes, until the water is a golden color.

In a separate small bowl, sift in the matcha, breaking up any clumps. Pour in 1/4 cup of the warm water and briskly whisk using a matcha whisk or electric whisk. Pour the matcha into the bottom of the serving glass(es). Fill the glass(es) with ice.

Pour the saffron water and pistachio milk into a small pitcher. Briskly whisk until well incorporated. Pour the saffron milk mixture into the iced matcha glass(es). Sprinkle a couple extra saffron threads on top.

Serve right away. Enjoy!
