Mint Matcha Latte with Blue Spirulina Cold Foam

A minty matcha latte for frosty mornings…

…topped with blue Spirulina cold foam to not just make it pretty, but boost its nutritional value and anti-inflammatory and antioxidant benefits.

NOTE: I find almond milk and coconut milk to froth up the best when making a cold foam. I just recommend using one that does not have any added gums, oils, preservatives or sweeteners.


YOU WILL NEED

  • 1 cup unsweetened non-dairy milk, warmed or steamed

  • 1 mint tea bag

  • 1-2 tablespoons collagen powder (optional)

  • 1 teaspoon maple syrup or honey (optional)

  • 1 1/2 teaspoons matcha

  • 1/4 cup hot water

  • 1/4 cup cold non-dairy milk

  • 1 teaspoon blue Spirulina


TO MAKE

Add the milk and mint tea bag to a mug to steep for 2-3 minutes.

In a separate small bowl, sift in the matcha, breaking up any clumps. Pour in the hot water and briskly whisk using a matcha whisk or electric whisk.

Remove the tea bag from the milk and whisk in the matcha mixture, collagen, and maple syrup, if using.

In a separate small bowl, whisk together the cold milk and blue Spirulina, until thick and foamy. Pour over the top of the matcha and serve right away.
