Salted Caramel Apple Cake

It’s candy apple season… I give you salted caramel apples in cake form. Enjoy!


YOU WILL NEED

Apple Cake

  • 1 cup cassava flour

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon fine sea salt

  • 1/2 teaspoon ground cinnamon

  • 1 cup maple syrup

  • 1/3 cup ghee or coconut oil, room temperature

  • 2 eggs or 2 flax eggs

  • 1 teaspoon vanilla extract 

  • 1 1/2 cups grated Granny Smith apples

  • Salted Caramel Glaze

  • Flaky Sea Salt

  • 1/2 cup maple syrup

  • 1/2 cup non dairy milk

  • 1/2 teaspoon fine sea salt

  • 1/2 teaspoon vanilla extract 


TO MAKE

Apple Cake

Preheat oven to 350F. Line a 9” round cake pan with a circle parchment paper or grease it thoroughly.

In a large bowl, whisk together the cassava flour, baking soda, salt, and cinnamon. Add the maple syrup, ghee, eggs, and vanilla and whisk in to make a smooth batter.

Fold the apples into the batter.

Pour the batter into the prepared baking pan.

Bake until a toothpick comes out clean, about 30 minutes.

Place the cake on a serving plate and pour the Salted Caramel Glaze over the top. Sprinkle with flaky sea salt.

This is delicious served warm or at room temperature.

Salted Caramel Glaze

In a small set over medium heat, bring the maple syrup and non-dairy milk to a simmer. Continue to simmer until the mixture easily coats the back of a metal spoon. Turn off the heat and whisk in the salt and vanilla.

Let cool slightly before pouring over the Apple Cake.
