SAFFRON VANILLA BEAN LATTE

There is just something about snuggling up with a warm drink. Whether it be for a movie or to get some work done, it’s not always a good time for caffeine, so I like to have options that are still yummy and offer other nutritional benefits. Adding saffron to this latte not only gives it gorgeous, golden color and cozy, fragrant flavor, but is said to be a powerful antioxidant, anti-inflammatory and mood-balancer.

Serves 1-2.


YOU WILL NEED

  • 10-12 saffron threads

  • 1 tablespoon date sugar or coconut sugar

  • 2 cups non-dairy unsweetened milk

  • ¼ teaspoon ground cardamom

  • ½ vanilla bean or ½ teaspoon vanilla extract


TO MAKE

In a mortar and pestle, begin to grind saffron threads into a powder. Add date sugar and continue until a finer powder has developed blending the saffron and date sugar together. If you do not have a mortar and pestle, skip this step.

Add non-dairy milk to a saucepan set over medium heat. Whisk in saffron and date sugar and bring to a simmer. Whisk in cardamom. Scrape the seeds from vanilla beans into the saucepan and whisk. Continue to simmer for another minute. 

If a mortar and pestle was not used, pour the heated milk mixture through a fine mesh sieve before serving. Otherwise, serve right away with extra saffron threads sprinkled on top.
