AVOCADO CACAO PUDDING

Any recipe that requires throwing all of the ingredients into a blender and constantly mushing with the blender wand is a great one for kids.

My daughter loves when I pack this in her lunch box. If you have them on hand, adding chia seeds, lucuma and mesquite boost the nutrition and flavor. Serve this pudding with berries or coconut whipped cream and you have yourself one delicious and nutritious treat.

Makes about 2 cups


YOU WILL NEED

  • 1 avocado, pits removed

  • ¾ cup water

  • ¼ cup raw cacao powder

  • ¼ cup maple syrup

  • 1 tablespoon ghee or coconut oil

  • ½ teaspoon vanilla extract

  • ¼ teaspoon fine sea salt

  • 1 tablespoon chia seeds, optional

  • ½ teaspoon lucuma powder, optional

  • ½ teaspoon mesquite powder, optional


TO MAKE

Combine all of the ingredients in a high-powered blender and blend on high until smooth and fully incorporated, about 2 minutes. Serve immediately or store in the refrigerator in a sealed container for up to 1 week.
